Okazaki Brewery, Ueda, Nagano

Okazaki Shuzo is a sake brewery company located in Ueda City, Nagano Prefecture. It has been making local sake “Shinshu Kirei” since 1665. It uses water from the Sugadaira water system and rice from Shinshu to brew a rich and elegant sake with traditional methods. Okazaki Shuzo also buys sake rice grown in Inakura’s terraced rice fields, which are selected as one of the 100 best terraced rice fields in Japan, to protect the local scenery. It also participates in the conservation of the terraced rice fields by signing a partnership agreement with the Inakura Terraced Rice Field Conservation Committee.
