Yoshidaya is a sake brewery located in Minami-Shimabara City, Nagasaki Prefecture. Yoshidaya is a small sake brewery with a production capacity of 90 koku, and is known for using the “Hanegi-shibori” method, one of the few traditional methods of sake brewing in Japan. This method is very time-consuming and labor-intensive because it is not machine-made, but by not fully pressing the sake, it produces a “pure” sake with no harsh taste.
